Reunion Island’s winning restaurant in Nimes

Reunion Island’s winning restaurant in Nimes (Forimmediaterelease.net) Jerome and Stephane Lebon Lenormand, two students at CAP Centhor, won the ANPCR Trophy (National Association of Teachers of Kitchens and Restaurants) 2013. The event took place in Nimes on Reunion Island at the end of last April.

Both CAP students have been trained at the center of Centhor in Saint-Gilles-les-Hauts. They spent two years learning their craft, between theory and practice in a restaurant.

The event took place from April 26-28, 2013. On the menu was the realization of a cocktail known as the Pink-Lady - a personal creation. For Jerome Lebon it was to innovate and invent a mocktail. The result was not long in coming with the creation of the Fournaise cocktail - a subtle blend of strawberry, ginger, and Tabasco. Local products were also reviewed during the presentation on Reunion Island to the jury.

This was followed by a test in which Jerome Lebon relied on the knowledge of Stephane Lenormand, to involve four coffees with four desserts. In the end, menu items appeared faultlessly from the two colleagues.

The Centhor, meanwhile, also invested in the project by providing the bull Collioure anchovies and Pelardon (goat cheese from the Nimes region) that were available in the test kitchen. Three ingredients used by Stephane Lenormand who concocted a paved bull roll, was stuffed with anchovies from Collioure, with mashed potato, and potato-flavored potato Pelardon – a dish that made the mouth water.

Through their culinary talent, both apprentices from Reunion Island outperformed other competitors, and the duet and won the prestigious title for 2013. The trophy has now found its place among other prizes Centhor previously earned.
