Sumahan on The Water opens new restaurant with an eight-meter-long bar ( With the opening of TAPASUMA, boutique hotel Sumahan on the Water adds to another hotspot for gourmets in the metropolis of Istanbul. The new Mecca for gourmet pilgrims is situated on the banks of the river Bosporus in a stylish renovated Ottoman factory building from the 19th century. A real highlight is an eight-meter-long marble bar on which Turkish “mezzes” are presented in tapas-style. The name TAPASUMA originates from the combination of the two words “tapa” and “suma,” which reflect the historic identity of the building. “Tapa” connotes cork whereas “Suma” denotes the distillery of the Turkish national drink Rakı which once was produced in the factory. Chef Gökay Çakıroglu fills guests with enthusiasm with a twist of Turkish and Mediterranean cuisine and seasonal fish dishes. The smart casual restaurant is perfectly suitable for lunch and dinner as well as celebrations in a casual atmosphere. The hotel-owned ferry Sumahan I transports guests over the Bosporus to the restaurant in the picturesque district Cengelkoy on the Asian side of Istanbul. Sumahan on the Water was opened in 2005. The renowned and Istanbul-based architects Mark and Nedret Butler recognized the potential of the former Ottoman distillery, dating back to the 19th century and transformed it into a design hotel that truly deserves its name. It was important to them to keep the original industrial building and set a course with contemporary design, clear lines and forms. The interior design, by architect Yasha Butler, is based on wood, marble, steel, and brick which blends skillfully with fine textiles. Various hues of blue, green, and grey reminds of the ocean that meanders in front of the hotel. Sumahan on the Water is a prime example for considered historical change and is a design phenomenon of Istanbul where quality design is presented in a historical context. The name of the hotel is composed of “Suma” and “Han,” where “Suma” is the Ottoman name for the unadulterated spirit used to make Raki and “Han” translates into hotel or hostel.
