Background history of the Dolce la Hulpe Brussels complex
Dolce La Hulpe Brussels was previously an IBM training complex, built in two phases during the 1970s. It consists of 14 buildings covering a floor area of approximately 50,000 m2. In 1973 the giant computer company IBM moved to La Hulpe onto the 70 hectare site adjacent to the Solvay estate, where they built a large conference centre which cost, at that time, one and a half billion Belgian francs. This property, together with the IBM office tower at the Botanics in Brussels, was purchased by Fortis in October 1997. These purchases were made through the issue of a Finest property certificate. Some reconstruction work was required and in July 2002 IBM announced that they were moving away from La Hulpe. In August 2005 Dolce International signed a management contract for the ex-IBM Centre at La Hulpe, which had been purchased by the Belgian investment company Banimmo Real Estate.

The "Tree O" restaurant seats up to 54 diners. Here, chef Pascal Marcin aims to delight his clientele with an original style of fusion cuisine using delicious, natural ingredients. He loves to use fresh local produce to create dishes that bring out all their flavours, thus achieving the Dolce ideal of serving refined food with a local touch, as in all Dolce destinations.
Pascal Marcin cooks each meat or fish in three different ways, and presents the three dishes on a single platter which can be ordered as a starter or a main course. Desserts are also served in this way. Thus, the restaurant's name "Tree O" not only continues the arboreal theme used in all the bars, restaurants and conference rooms at the Dolce La Hulpe Brussels, but is also a pun on the word "Trio" to reflect the restaurant concept.
The Dolce La Hulpe Brussels team have added an artistic dimension to the conference and hotel centre by displaying works by renowned Belgian artist Jean-Michel Folon, whose Folon Foundation is a close neighbour. The hotel has a bronze sculpture by the artist as well as 5 of his series of silkscreen prints inspired by post cards, which hang in the gourmet restaurant. Taking his inspiration from these works, Pascal Marcin has created a Folon Discovery Menu, a culinary interpretation which invites you to travel into the beautiful world of Jean-Michel Folon's landscapes.
